Here is Elizabeth'sstory about her Kahlua:

"Since owning my Thermomix it has become a tradition to make edible gifts for the family at Christmas. We are all mad keen Kahlua drinkers so I went in search of a recipe because what sort of Christmas hamper doesn't have alcohol in it? Most of the recipes I found were made on coffee granules and that's ok but I have a coffee pod machine that I need to make use of or my hubby will list it on Gumtree! Given that booze and coffee are two of his favourite things winner winner chicken dinner! This recipe is the result of me cherry picking the best bits of what I found and after trialling it on the family last year it got a big thumbs up."

Ingredients

  • 600g espresso
  • 700g raw sugar
  • 360g vodka
  • 4 tablespoon vanilla essence

Instructions

  1. For the espresso I used my Aldi Expressi and pods. 6 pods yield 600-700g of coffee if you do 1 long cup and 1 short cup per pod. I used the New Guinea flavour which is strength 10. I also used a jug to collect the coffee instead of a cup and removed as much foam from the top of the coffee as I could before adding to the TM bowl.
  2. Place sugar and coffee into TM bowl and mix 5 mins / speed 1 / MC off until sugar is dissolved.
  3. Remove TM bowl from unit and allow coffee to cool.
  4. Add vodka and vanilla and mix 1 min / speed 2 / MC off, placing simmering basket onto TM lid to prevent any spatter.
  5. Bottle and enjoy!

Notes

Add a vanilla bean to your bottle for extra flavour. Looks really good in bottles you may be gifting.
If you don't own a coffee pod machine you can use your coffee plunger or percolator to make espresso.

OMG! I made this last night! My friend and I had 2 glasses each, both agreeing it is FAR better than the original. I even had a tiny bit left to try of store bought and it was nowhere near as good as your recipe.
I made a half recipe and used 8 espresso shots of coffee in a coffee machine, I may make some of them long shots next time now I’ve read you comment about how much coffee is in a pod.

I’m also going to reduce the sugar next time, as I found it a little too sweet, but I loved the texture, so not too much. I’m sending my friend home with a bottle of it!

Thank you so much for this recipe.

    Great recipe, thank you.
The first time I made it, I reduced the sugar to 500g. It was delicious (better than store Kahula), but was still very sweet. I’ve just made again and reduced the sugar down to 400g, so we’ll see how that goes.

Hi thanks for the recipe! How much espresso would I need if I cook it with a coffee percolator? I think it would be too strong if I would make 600g of espresso, because you also used to pod twice...

    • thermofun says

Hi Levi, I'd suggest you use 50g of coffee in 600g of water. I'm basing that on 1 pod is approx. 8g so 6 pds is approx.50g. I'd love to hear how you go. :)

I'm wondering if the sugar cpuld be halved or a replacement for sugar voyld be used. I realise the sugar is needed for syrupy texture. I'd like to make it a little diabetic friendly as a treat.

I made another batch of this today and used Bundy Rum instead of the vodka. It's divine and a little bit sweeter than the vodka version. Looking forward to some Espresso Martinis tonight!

I don't have a coffee machine any more nor do I have a plunger. How else could I make the espresso work for this?

    • thermofun says

Hi Charinn, you could buy Harris coffee bags from your supermarket or perhaps a trip to your local coffee shop with a thermos will do the trick! :) Enjoy!
