Irish cream fudge ... mmmmm...

Nothing expresses Irish culture quite like Baileys Irish Cream, the delicious beverage that comprises 50% ofthe spirits exported from Ireland.

And we have found from experience that Bailey’s goes great with the taste of good ‘ol chocolate fudge…

Sooooo – what better way to get your Irish mojo working than throwing a bang on party, filled with two of Earth’s most delicious flavors?

Irish Cream Fudge: Ingredients

  • 4 ½ cups sugar
  • ½ lb butter
  • 1 can evaporated milk – 12 oz
  • 2 pkgs Nestles milk chocolate chips – 12 oz each
  • 1 pkg Nestles semi-sweet chocolate chips – 12 0z
  • 14 oz jar marshmallow cream
  • 2/3 c. Baileys Irish Cream
  • 2 t vanilla extract
  • 2 c. coarsely chopped pecans

Irish Cream Fudge: Preparation

  1. In a large, glass mixing bowlcombine: chocolate chips, marshmallow cream, Baileys, vanilla and pecans. Setaside.
  2. Line a 10"x15" baking dishwith foil and lightly butter.
  3. In a medium saucepan, combine:sugar, butter and evaporated milk. Over medium heat, bring to a boil.
  4. Stir constantly and cook slowly for11 minutes.
  5. Remove from heat and pour milkmixture over the chocolate and Baileys Irish Cream mixture in large glassmixing bowl.
  6. Mix all ingredients with spoon.
  7. Stir slowly for about 5 minutesuntil ingredients are mixed well.
  8. Pour mixture into your preparedbaking dish.
  9. Let chill in refrigerator until set.
  10. Yield: about 5 lbs.

Variations

Now, let your creativity take wingsand explore variations.

Substitute toasted slivered almonds,pistachios, walnuts, cashews or hazelnuts for pecans. Add a touch of flair bygently pressing nuts on top of fudge before refrigerating.

Substitute cappuccino, caramel,butterscotch, peanut butter or white, vanilla flavored baking chips forchocolate chips.

Substitute sweetened condensed milkfor evaporated milk.

Switch-up flavors of Baileys IrishCream - hazelnut, crème caramel, mint chocolate and coffee.

Presentation Tips

People eat with their eyes. Not onlymust home chefs be masters at the art of cooking, we should learn the basics ofartistic plating.

Different sizes and shapes of white plates are good becausethey put the focus solely on the food.

When you're serving individualplates of Irish Cream Fudge, consider a small square white plate. Put an oddnumber of pieces on each plate i.e. three, not four, five not six.

For a pretty table presentation,arrange fudge on crystal cake stand.

Put a white paper doily on top of theplate before arranging the candy to add a wee bit of Irish class.

Play around with different ideas andbefore you know it, you'll be expressing your Irish food stylist self!

Beware...

In the beginning, Baileys uniquemixture of cream and whiskey was marketed toward elderly spinsters, withsophistication.

We're not certain where we wentwrong, but after consuming 3-4 pieces of our heavenly fudge, ourelderly spinsters fell asleep.

However, their synchronized snoring did remindus of a sweet Irish lullaby – Go figure!
