Bubbly sparkling champagne with refreshing raspberry and strawberry frozen creamsweetened with Sweet’N Low make this the ultimate brunch beverage.

Every leisurely brunch deserves a delicious co*cktail recipe to share with friends. Whatever you’ll be serving, Strawberry Cream Mimosas will pair perfectly and satisfy any sweet tooth without all the extra calories.

A weekend brunch is a good time to break out the bubbly and share a light, crisp and refreshing beverage with friends and family. Brunch beverages should be fun, refreshing and exciting. If you’re looking for a beverage to serve that guests will love, this is the recipe!

I’ve lightened up the classic mimosarecipe by using Sweet’N Low® as a zero calorie sweetener. I used unsweetened fresh fruit instead of pre-made juice and sweetened it with Sweet’N Low and honey. The fresh fruit cream is full of flavor and creaminess that pairs perfectly with champagne. Mimosas are the classic brunch beverages to serve and this drink is both delicious and adorable.

Sweet’N Low is diabetic friendly and helps reduce calories in drink recipes. To find more recipes to use it in, click here.

To make this recipe, start with fresh or frozen strawberries and raspberries. Heat them up on the stove top to get them nice a soupy. Sweeten it with Sweet’N Low and a little honey to give it a nice flavor without all the extra calories. Blend it up in a blender and press it through a fine mesh strainer to separate the juice from seeds and skin.

Pour in half and half cream, stir and pour in ice cube trays or a freezer safe dish. I like to use an ice cube tray and allow it to come to room temperature for about 5-10 minutes to easily remove the cubes. Place liquid mixture in the freezer for at least for hours of store until ready to use. Pour champagne half way up glass and add strawberry cream cubes.

Ingredients

  • 24 oz frozen raspberries
  • cup fresh or frozen strawberries
  • ¾ cup sugar or 6-7 packets Sweet'N Low *
  • 1 tbsp honey
  • 1 cup half and half cream
  • 1 tsp pure vanilla extract
  • 2 bottle sparkling champagne see notes for alternatives

Instructions

  • In a medium sauce pan set on low/medium heat, pour raspberries and diced or frozen strawberries in pot. Allow berries to get soft and soupy, about 10 minutes. Pour in 6-7 Sweet’N Low packets to sweeten berries. Be sure to taste berries after 4 packets because some berries are sweeter than others, then adjust sweetness to desired taste. Using a spatula, stir Sweet’N Low well then add honey. Stir mixture and continue to heat for another 5 minutes. Take off heat and allow to sit for a few minutes. Puree or blend mixture in a blender well. Place fine mesh strainer/colander over measuring cup and pour liquid through. Tap strainer on cup to push liquid through, working in batches. Move seeds to small bowl and continue to use strainer to separate the remaining liquid from the seeds.

  • Once complete, run a little of the half & half cream through the strainer with the seeds to remove any additional liquid; I got an additional 1/4 cup raspberry liquid doing this. Pour remainder of cream into raspberry liquid and stir to combine. Add a splash of vanilla extract and stir. Pour into an ice cube try and freeze or pour into plastic bowl and freeze for at least 4 hours.

  • When ready to serve, pour champagne into glass and add cubes.

Notes

Non-alcoholic sparkling wine, sparkling cider, or ginger ale can be substituted
*Sparkling champagne or sparkling wine

  1. Can this be made into a pitcher then poured into glasses. I’m not sure how the ice cubes fit into a champagne flute

    1. Sure, that should work!

  2. Hi Jessica,

This looks delicious! How long should you let it thaw it from the freezer before pouring the champagne into it?

  4. Hi, does it say somewhere how many servings this makes? I’m guessing twelve, as that’s the usual number of cubes in a tray.

    1. Hi Katherine, each bottle of champagne has about 6 servings. Two cubes can be placed into each cup or 1 cube, if using 2 bottles of champagne. I’ve done both. Hope that helps

  5. Hi Jessica! Can you use regular sugar instead of Sweet & Low? Looking to make this for a bridal shower. Thanks! Debbie

    Reply

    1. Of course. I’d start with 1/4 cup sugar and add more sugar if needed tasting as you go, especially if the berries are more tart right now.

FAQs

What's the best ingredients for a mimosa? ›

The ratio is simple: equal parts sparkling wine and orange juice. Mimosas are perfect for brunch, birthdays, holidays, and weddings. For the best mimosa, use a dry sparkling wine, not sweet. Look for “dry” or “brut” on the bottle.

What is the ratio of champagne to orange juice for mimosas? ›

If you like a little more bubbles to OJ, opt for a 2:1 ratio. So if you're serving a mimosa in a 6-ounce flute glass, you'll aim for about 4 ounces of bubbles and 2 ounces of juice for a nice balance. Of course, if you like just a hint of wine, flip that ratio and go for 1 part sparkling wine to 2 parts orange juice.

What is a strawberry mimosa made of? ›

Strawberry mimosa calls for just 3 ingredients; orange juice, strawberries, and champagne. The best orange juice for mimosas is either fresh squeezed or a store-bought kind with pulp. Orange juice with pulp tastes more similar to fresh squeezed.

What are the best juices for mimosas? ›

The Best Fruit Juices for Mimosas

Because they have a good acid-to-sweetness balance and hold their flavor, orange, grapefruit, and cranberry are juice must-haves, while pineapple, pomegranate, passion fruit, mango, and guava make for some exciting twists on the traditional juice menu.

Is prosecco or champagne better for mimosa? ›

Prosecco is often recommended as a substitute for Champagne in mimosas, and Prosecco's fruitier profile can be nice in a sparkling co*cktail. However, I think Cava, a sparkling wine made in Spain, works best for mimosas. Not only does it come closest to tasting like Champagne, but it's also generally less expensive.

What alcohol is used for mimosas? ›

This mimosa co*cktail is made with fresh orange juice and Champagne, but you can use sparkling wine, if you prefer. Enjoy this delightful co*cktail on Mother's Day, Christmas brunch, or any special occasion! This mimosa recipe features the perfect ratio of Champagne-to-orange juice.

What is the best juice to mix with champagne? ›

Cranberry juice, apple cider, grapefruit juice, or pomegranate juice would all be great choices. You could also add a splash of orange liqueur, such as Grand Marnier, for a stronger orange flavor. A little goes a long way here – start with a 4:1 ratio of orange juice to liqueur.

Can you use Moscato for a mimosa? ›

These Sunrise Moscato Mimosas are made with a sparkling red moscato and include a splash of cranberry for a festive bubbly brunch! Begin by pouring the orange juice into your glass. You should only fill the glass ⅓ of the way with the orange juice. Slowly pour the Bubbly or Sparkling Red Moscato.

Why do you put strawberries in champagne? ›

Not only do strawberries become beautifully iridescent in a glass of bubbly, but they also add rich, appealing color and a sweet flavor that complements the dryness of the champagne. Sounds like the perfect combination to me!

What is the difference between Bucks fizz and mimosa drinks? ›

Buck's Fizz & Mimosa co*cktails – history & recipes. The Buck's Fizz and Mimosa are very similar co*cktails, the Buck's Fizz is made with two-parts champagne to one-part orange juice, while the Mimosa is made with equal-parts champagne and orange juice.

What fruits are good in mimosas? ›

OJ isn't the only juice that makes for a great mimosa. Offer pineapple, guava, orange mango, and cranberry juice options. That way, after everyone has their classic orange juice-based mimosa, they can mix it up. Bonus: Include a variety of fruits, too, like blackberries, strawberries, peaches, and raspberries.

Can you use frozen fruit for mimosa bar? ›

Fill bowls with fresh fruit. Make sure large fruit, such as pineapple, is cut into smaller pieces. Fruit should be fresh and presentable. Frozen fruit is not suggested.

Do you use Brut or extra dry in mimosa? ›

The best champagne for Mimosas is real French champagne which is expensive. But brut sparkling wine, Cava and dry prossecos are excellent alternatives that most restaurants and bars use. Look for "brut" sparkling wine or champagne - "brut" means dry and that's what you want for Mimosas (rather than sweet).
