Don't throw the mirin out. It should be added to the dish with the beans.
If you can locate genuine fermented mirin, oh god, buy it. Not cheap. So what. The addition of flavor is to die for.

I added some sliced bell peppers and snow peas to the sauté, just after the shrimp. It was good.

I sauté some chopped asparagus until almost crisp tender then add the shrimp, as well as some sliced onion along with the garlic and ginger. Serve over rice.

Since green beans are often prepared in the same manner, I 'dry fried' 1" fresh beans before adding the garlic. Red bell pepper would be a nice addition too. I didn't have scallions (they're hard to find here in Italy) so I used leek slivers for topping. I did include toasted sesame oil. This is a great quick recipe.

Good recipe. I love more flavor, but rinse beans when the packaging says to wash before cooking.

Shrimp with Black Bean has always been one of my favorite dishes in Chinese restaurants, or when I order takeout I ask for Broccoli with black bean or chicken with black bean. In cooking this dish, I find I alternate the heat between medium low and medium high! This is a terrific dish; a great stand-by for a quick, simple weeknight treat.

So good!! Better than takeout, and easy, too. Didn’t even consider rinsing the black beans thanks to these comments, and also because my black beans came in a slightly dry, pasty block that didn’t seem rinseable; the package was entirely in Chinese, so no idea what the instructions were, if any. Anywho, amazingly delicious dish. Made some braised baby bok choy, served over white rice. Scallion garnish really finished the dish. I’m going to try tofu next time instead of shrimp.

Simple and delicious. I added a few shakes of red chili flakes with the garlic and about 1 teaspoon of sesame oil at the end with the soy sauce. Better than take-out by a mile!

Fermented Black Beans are fermented Soybeans.

can you substitute fermented soybeans for black beans? And/or add black bean sauce to the fermented soybeans? I could not find fermented black beans in store.

I have two bottles of mirin, one seasoned and one unseasoned. which should I use?

I made this twice. The second time, I added about 2 tablespoons of sesame oil at the end and let it heat it, then tossed everything and sprinkled the scallions. It was a major improvement. Delicious and easy.

This was really good but I added a lot more ginger and, as per other's suggestions, added the soaked black beans with liquid to the dish. I used Chinese cooking wine and a bit of sugar. Needs something else, maybe a fresh side dish or something because it is so intense tasting. Adding red pepper flakes is a good idea. Well worth making!

Include cabbage and red bell peppers cooked with the garlic.

I'm new to fermented black beans. I rinsed them well as directed on the package but wasn't sure how long to soak them in mirin. I did 20 minutes.? The dish was easy to make but does need a little zip. Served with Sam Sifton's baby boo chou with oyster sauce which helped. I'll try it again.

Fuschia Dunlop's cookbooks always suggest rinsing black beans, for what it's worth.
