How to Store Jalapeno Cilantro Coleslaw

Because this coleslaw recipe doesn't have any mayonnaise, it stores better than a traditional coleslaw. To maximize the shelf life of your cilantro coleslaw, refrigerate it in airtight containers. Properlystored, this coleslaw will last for about 3 to 5 days in the refrigerator.

Ingredients

  • FOR THE COLESLAW
  • 3 cups thinly sliced green cabbage
  • 2 cups thinly sliced purple cabbage
  • 3 carrots, shredded
  • ¼ cup green onions, sliced thin
  • ½ cup coarsely chopped cilantro
  • 1 jalapeno, seeds removed, finely diced
  • FOR THE LIME VINAIGRETTE
  • Juice of 2 limes
  • ⅓ cup olive oil
  • 1 large clove garlic, minced
  • 1 to 2 teaspoons honey
  • pinch red pepper flakes
  • salt and black pepper to taste

Instructions

  1. Combine the shredded and chopped vegetables in a large bowl and toss to mix.
  2. Combine all vinaigrette ingredients in a bowl and whisk.
  3. Pour the lime vinaigrette over the coleslaw and toss to mix.
  4. Chill if desired
