  • ranch dressing mix
  • crumbled crispy bacon
  • onion
  • chicken broth
  • cream of chicken soup
  • russet potatoes or if you'd prefer baby red potatoes or Yukon gold potatoes.
  • cream cheese
  • shredded cheddar cheese

Instructions

  1. Spray crockpot with non stick cooking spray.
  2. Pour the melted butter into the slow cooker liner.
  3. Add the Ranch dressing, bacon bits, and chopped onion. Mix so bacon bits and onions are coated with the butter mixture.
  4. Add the chicken broth and cream of chicken soup. Mix well.
  5. Next, chop potatoes. Add them to the mix and combine until the potatoes are coated in the broth/soup mixture.
  6. Cover and cook on HIGH for 3 hours or until the potatoes are soft when you insert a fork through them.
  7. Once the potatoes are cooked, add the cream cheese and the shredded cheese. Gently mix and cover to cook and melt the cheese. An additional 15 minutes.
  8. If desired, serve with additional shredded cheese, crumbled bacon and thinly sliced green onions - enjoy!

FAQ's

Why isn't my potato soup creamy?

If you soup isn't creamy, that usually means that you haven't added enough dairy into the soup. You can add a splash of heavy cream to make it creamier.

Can I leave potato skins on for potato soup?

Yes, leaving the skins on the potatoes will give it a rustic look and a little texture. So, it's your choice based on your preferences if you leave peels on or off.

Which type of potatoes are best in crockpot potato soup?

I like to use russet potatoes as they hold up better in the slow cooker.

Can I use evaporated milk?

You don't need milk for this recipe, but if you want to add a little more creamy texture to this soup, you can add some evaporated milk for a rich flavor.

Things to know

  • I've found that using freshly shredded cheese in this recipe works the best because it melts better than the pre-shredded cheese.
  • I didn't peel the potatoes for this recipe, but you can also peel them if you don't want peels in your soup.
  • Chives and sour cream also make great garnishes for this easy recipe.
  • I like to cut the cream cheese up into chunks so that it melts quickly into the soup.
  • Try to cube your potatoes into even-sized pieces so that they cooked evenly.

Variations

  • If you prefer a touch of heat in your potato soup you can add a dash of crushed red pepper flakes or cayenne pepper.
  • Do you prefer a smoother soup? If so, use a potato masher or immersion blender to break up the potatoes in this soup,
  • I like the taste of sharp cheddar cheese in this great recipe, but you could use your favorite kind of cheese that melts well instead.
  • Vegetable broth can be used in place of chicken broth if you don't have chicken on hand.
  • If you are not a fan of pork bacon, turkey bacon can also be used in this creamy potato soup. And speaking of bacon.... extra bacon is always a plus!

Storage

  • Refrigerate - Allow the soup to cool before storing it in an airtight container and placed in the refrigerator. The soup will keep fresh up to 3 days.
  • Freezer - Dairy and potatoes really do not thaw well, so I don't recommend that you freeze this soup.
  • Reheat - Reheat single bowl of soup in the microwave on 50% power for two minutes or until warm. However, I've found that the best way to reheat this loaded potato soup is on the stove top over medium heat. If the soup is thick you can add a little milk or chicken stock to thin it out.

    I always make a stovetop version of this with leftover mashed potatoes on Black Friday each year. This time, I am going to try crock pot potato soup--because who wants to actually use the stove the day after Thanksgiving?! LOL!!!
