How to Make Divinity Candy Recipe
Use parchment paper to line baking sheets.
Prepare a medium heavy saucepan and add a candy thermometer to the pan.
Add the sugar, corn syrup, and water to the pan and heat on medium until the ingredients meet a hardball stage. The temperature will reach 250-260 degrees F.
While your ingredients are cooking, begin to beat the egg whites to form stiff peaks.
Once the sugar is at the right temperature, take away from the heat and gradually add to your egg whites, on high speed, whip continuously.
Pour in the vanilla and beat again until the candy starts to hold its shape. You will do this for about 10-15 minutes.
Before use, spray the cookie scoop, then arrange scoops of dough onto the baking sheets.
Add your desired garnish right after, I used pecans.
You will need to let the candy dry and harder for several hours or overnight for the best results.
Then, store the rest of the candy in an airtight container for up to 2 weeks.
How do I Store Divinity Candy?
You will need to store the Divinity Candy correctly for it to last the longest. Store this candy a couple of different ways. You can store in an airtight container, Ziploc bag or wrap tightly in plastic wrap.
How Long Does it Take for Divinity to Harden?
It can take several hours for the Divinity candy to harden. You will want to give it enough time for the best results. I like to plan on giving it overnight to set and harden before enjoying it.

Notes
The time will depend on your mixer. I found it best to beat on high speed for 5 minutes and then let the mixture and mixer rest for 2-3 minutes. Then repeat several times
Corn Syrup – This is added to stop the sugar from crystalizing giving you a very smooth, chewy texture that's not grainy. Sugar – White granulated sugar is the best for this recipe, avoid brown sugar or it'll affect both the taste and look of the divinity.
Divinity should be dry and set within two hours, but have patience. It may take a little longer. If you would like to try correcting a thin divinity, beat in a little bit of powdered sugar at a time until the consistency is drier and thicker, before dropping onto sheets of waxed paper again to dry.
Divinity, nougat and marshmallow all belong to the same crystalline candy family and all three are very, very close in terms of texture, flavor and technique. Divinity is tempermental, so NEVER make it on a wet and rainy day.
Humidity equals wet, and wet equals candy that often won't set. Even in the cooler and less humid months, it can be a challenge to make old fashioned divinity - that being a divinity that is purely sugar, corn syrup, water, egg whites, chopped pecans, a little vanilla - and a goodly amount of elbow grease.
Allow it to rest for about 15 minutes. This will absorb more moisture and will allow your sweet treat to harden. If you want your divinity candy to soften up a bit add hot water a tablespoon at a time and beat it again. Repeat the process until you get the desired fluffy consistency.
Divinity candy can be stored in an airtight container at room temperature for up to 2 weeks. It can also be stored in the refrigerator for up to 1 month. If you are storing divinity candy in the refrigerator, let it come to room temperature before cutting it into squares.
Divinity candy should be stored, airtight, for up to 5 days. It's best not to expose your candy to humidity. If you want to store your candy long-term, you can keep it in an airtight container in the freezer for up to a month.
Now, making divinity comes with all kinds of warnings about humidity and weather. You can't make it if it is "too" humid or if it's raining. The moisture in the air will keep the candy from setting and drying properly.
Divinity gets its name because it tastes, well, divine. The nougat-like candy is made with egg whites, sugar, and corn syrup. Divinity is famous for being finicky: Experienced home cooks know you can't make it on a day with high humidity, as it needs dry air to set properly.
Not a thing wrong with that, except I do hate to see the death of the old methods. Divinity, whether made the old fashioned way, or using a shortcut, should never be dry and brittle, or grainy and clumpy. It should be light, airy and with a creamy, soft bite. Here's how to make my Old-Fashioned Holiday Divinity.
But if your divinity fails to harden, you can beat in two tablespoons of powdered sugar and allow the mixture to rest a few minutes; if the candy hardens too much, you can blend in hot water a tablespoon at a time until the perfect, fluffy consistency is reached.
Hi Ursula, divinity is a very finicky candy to make and humidity in the air can affect how it sets up. If it was really humid the day you made it -- or was raining, perhaps -- it could make them not set up as properly or dry them out. I'm sorry they turned dry on you!
But if your divinity fails to harden, you can beat in two tablespoons of powdered sugar and allow the mixture to rest a few minutes; if the candy hardens too much, you can blend in hot water a tablespoon at a time until the perfect, fluffy consistency is reached.
If the candy falls back into the bowl in ribbons that immediately merge back into themselves, the divinity is not done and you need to keep beating. Eventually, the divinity candy will lose it's glossiness and sheen and stop being so sticky, which means it's ready.
