The tomatoes are delicious, and the fish is great too. I always struggle to flip flounder on the pan because it's so flakey, and some of the breading came off when I made this, but it was still tasty.

Rather than use a second skillet, put a foil-lined baking dish in the oven to pre-heat and baked the tomatoes in that. Used cod loin and “applied” the herbs along with the salt & pepper. Sprayed again and then dredged in panko. Very easy, the big flavor comes from the capers-tomatoes.

Absolutely fantastic. Made the recipe as written except I used cod instead of flounder. The roasted tomatoes and capers made the meal! Even my husband, who isn't a fish lover thought it was great.

This tasted great, but unfortunately mine fell apart when I tried to flip it. Next time, I'm going to try baking it instead of sauteing.

My husband and I agreed this is a 5 star recipe! Used Tilapia instead of Flounder. I added 1/4 sweet onion to the tomato mixture. Placed in oven. I dipped the fish in egg before dipping it in the panko/parsley/thyme. Fried it in EVOO for a few mins on either side. Then placed the fish on top of the tomato mixture and baked it another 10 minutes. Drizzled a little of EVOO and the caper juice on top of the fish. Yum!

For the fish, fine: as written it was a bit bland but a little more herb and a little more salt/pepper and it would have done the trick. The panko made it crispy and a quick rest on paper-towels to degrees was a good move. Roasted tomato/capers was a wonderful addition to server over the fish and hashbrowns as it brought a great flavor to all. But the Fennel Hashbrowns are a disaster. OK, maybe it is just my inability to make hashbrowns, but it isn't for lack of trying. The bottom line on hashbrowns for me is that it isn't something every cook breezing through the pictures looking for dinner can do, and as they go from hashbrowns to browned mashed potatoes quickly, either don't include them as the side dish in your recipe spread, or really make it fool proof.

This was a most excellent dinner. We used red fish that my husband caught in the gulf. Make SURE to make the hash browns with it. This makes the dish. They take a long time to cook and get brown and the fennel was unexpectedly good. I don't love fennel, but it made this dish. The only thing I did different was include a light mayo tartar sauce on the side. Yummy!

Simple weeknight meal! I increased the parsley & thyme and used Italian style Panko, I also dredged the fish in a beaten egg & tablespoon of water. The roasted tomatoes are delicious as is the Fennel/Potato Hash.

Just OK. Very dissappointed because there were great reviews on this one but I just thought it was OK. There was nothing special about this in the flavor. Won't make again.

I loved the crispiness of the flounder. However, I honestly couldn't taste the thyme so I'd suggest increasing the amount if you really like thyme. The tomatoes were so flavorful, a great use of tomatoes that might be a day past their prime. Loved this recipe, so easy and so delicious! The roasted tomatoes were an added surprise, I normally don't like roasted tomatoes but these were the easiest and sooooo good! This will definitely be a go to recipe. I rounded out with quinoa.

Very good and easy for a weeknight meal. I'm not a huge fan of fish, and I enjoyed this a lot, as did my 4 year old. Will definitely make again.

This was really great! I rarely cook fish because I am never sure what to do with it and frankly it scares me. The only change I made was to saute the fennel and onion for the hash browns before adding the potatoes.

Excellent recipe!!! I made both the fish & the hash, loved the tomatoes in fact my granddaughter playfully complained that her grandpa got more than she. I made no changes other than to cook the potatoes about twice as long as the recipe calls for, otherwise the fennel & onions would have been crunchy, not carmelized like mine were, doing this made the hash heavenly.

The "breading" for the flounder was very flavorful. My problem was that most of it came off when cooking. Using cooking spray to make it stick did not work for me. Next time I will try broiling it.
